Homemade Pancake Mix

Tonight was “breakfast for dinner” night at our house and I had a chance to try out something new: homemade pancake mix. I’ve made pancakes from scratch before but we usually purchase boxed pancake mix because my husband is the weekend breakfast maker and he likes having a mix to work from. When we ran out recently I decided to just mix up my own.

I used this recipe from Cooks.com:

12 c. flour
4 c. dry instant powdered milk
3/4 c. baking powder
3/4 c. sugar
2 T. salt

The receipe for pancake batter is:

1- 1/2 c. of the above mix
1 c. water
1 egg
2 T. oil

I’m happy to report that it made fabulous pancakes! And I can store the mix in a gallon sized Ziploc with the recipe written on the front for my husband. (I would recommend, however, mixing it first in a large bowl. My original plan was to combine the ingredients in the bag and give it a shake but the bag was much too full to do that!)

I love this idea! I,too, like breakfast for dinner, and if a mix is available after a long day at work, even better.

I’m just curious…

how many pancakes do you get from 1 1/2 cups mix plus the water and egg? Is it about the same for the mix you purchase at the store?
